Precision Moisture Testing Reveals the Potential Of Every Coffee Bean

When you experience Earthen—whether visiting, enjoying a cup at the shop, or enjoying a fresh bag of specialty arabica coffee at home—our conversations and thoughts usually turn to the things that we experience with our senses. We talk about the sweet, floral aroma of a fresh Ethiopian, the rich earthy notes of an Indonesian, or how a specific processing method shapes the body of the coffee in your cup.

I want to share more in the process of roasting coffee where one is unable to visually see the moisture characteristic when looking at a green coffee bean. Day in the roastery is directed by the measured thread that connects the green coffee bean to your brewed cup. It embraces the vital key to every single flavor we unlock, internal bean moisture—specifically, 10% to 12% water content that our green coffee quality standard meets. Yet, while moisture itself is hidden deep within the cellular walls of the seed, our commitment to moisture testing is one the most important actions we measure before a production day begins.

The Moisture Meter on the Desk: Making Hidden Moisture Visible Before We Purchase.

For us at Earthen, protecting the integrity of your cup commences before green coffee arrives at our facility. Prior to committing to purchasing a single bag we make this invisible metric completely transparent through strict data testing.

On requesting and receiving pre-shipment sample it goes through strict gatekeeping process. Prior to sample-roasting or cupping for flavor, I measure for moisture on our precision meter.

A sample received where the moisture meter registers at 9.5% or 12.5%, we do not go ahead irrespective of how good the farm's reputation is or how beautiful the profile promises to be on paper. By placing a visible, and highly accurate number on that hidden moisture, we ensure the coffee is never compromised. Should it not fall within the 10% to 12% moisture window, the green coffee will either fade in our storage or roast unevenly in the roasting drum.

Stringent pre-purchase testing is our non-negotiable baseline. When a specialty arabica coffee officially joins the Earthen lineup, its numbers have already proven its structural health.

Guarding Moisture Through the Changing Seasons.

Once a lot passes our test and earns its place in our green storage room, the work shifts from selection to preservation. Think of that 10% to 12% moisture as the bean's heartbeat.

  • The Memory of Origin: That water isn’t just random moisture; it is a physical remnant of the origin. It’s the morning dew from the mountains, the specific rainfall of that harvest cycle, and the meticulous care of the producers who dried the seeds.
  • The Keeper of Flavor: If that moisture drops even a single percentage point too low during storage, the bean begins to age prematurely. The vibrant organic compounds collapse, and the cup loses its soul, tasting flat and faded.

Our local climate shifts through the seasons, protecting this moisture window is a ritual. I don’t just store bags of coffee; I tend to them. Keeping a constant, visible eye on our inventory numbers with regular meter checks is my way of checking in on the health of the coffee before I ever introduce it into the heat of the roaster.
